We smoke our meats with our own hickory & fruit woods. Long and Slow (at least 14 hours) for the best quality, flavor, & texture. Low temperature… slow cooking produces the “pink” smoke ring; which is where the true smoke flavor comes from. We smoke our meats daily which is why we may occasionally run out!
